Eating Ice Cream
My dear Cassandra,—I take the first sheet of fine striped paper to thank you for your letter from Weymouth, & express my hopes of your being at Ibthorp before this time. I expect to hear that you reached it yesterday Evening, being able to get as far as Blandford on wednesday.—Your account of Weymouth contains nothing which strikes me so forcibly as there being no Ice in the Town; for every other vexation I was in some measure prepared; & particularly for your disappointment in not seeing the Royal Family go on board on tuesday, having already heard from Mr Crawford that he had seen you in the very act of being too late. But for there being no Ice, what could prepare me?

As it’s so hot here that my brain is slowly melting (the majority of houses in this part of the world don’t have AC), I thought we could talk about desserts. Ice creams in particular. (And I certainly feel for poor Cassandra—no ice cream! Gah!) (Why is there no ice cream in my freezer?!!?!?)

Last November Myretta wrote a post about ice houses and how ice cream was made in the Regency period, while in a post in April Rose showed us an ice-pail, in which ice cream was brought to the table. (Wait, you don’t eat it straight out of the bowl? Because homemade ice cream is, like, the best thing in the world!)

When I looked up various ice cream recipes from the Regency period, I was quite surprised to see that a lot of recipes call for putting the cream with the sugar and/or jam/fruit puree directly into the freezing pot. In my experience, it’s easier to use a thick custard as the base for ice cream: it’s creamier from the get-go & thus freezes more easily (though admittedly, there’s always the danger that you end up eating the custard before you get around to making the ice cream…).

In The Complete Confectioner, Frederick Nutt describes the historical method of making ice cream: the freezing pot with the ice cream base is put into a pail packed with ice and salt and rotated until the base has frozen. Nutt also elaborates on the difficulties and pitfalls of making ice cream: “[D]o not be sparing of salt, for if you do not use enough it will not freeze” (from the 1807 edition, which you can find on Google Books). And there’s nothing more frustrating than when your ice cream won’t freeze!

I’ve long loved Nutt’s book, and the section on ice creams is particularly awesome. For not only does he suggest adding a little cochineal to give your ice cream a pretty color, but he also lists 32 (THIRTY-TWO!!!!) different recipes, with flavours ranging from raspberry ice cream to biscuit ice cream to Parmasan ice cream. That’s a man after my own heart!

In contrast to poor Cassandra in Weymouth in 1804, many of Jane Austen’s characters get to enjoy ice cream. In Northanger Abbey Maria Thorpe tells Catherine, the heroine, about an outing the day before:

“—that they had driven directly to the York Hotel, ate some soup, and bespoke an early dinner, walked down to the pump–room, tasted the water, and laid out some shillings in purses and spars; thence adjoined to eat ice at a pastry–cook’s, and hurrying back to the hotel, swallowed their dinner in haste, to prevent being in the dark; and then had a delightful drive back, only the moon was not up, and it rained a little, and Mr. Morland’s horse was so tired he could hardly get it along.”

A rather more exciting visit to a pastry cook’s can be found in The Beautiful Cassandra, one of Austen’s very early works:

“She then proceeded to a Pastry-cooks where she devoured six ices, refused to pay for them, knocked down the Pastry Cook and walked away.”

Tee-hee!

And now please excuse me while I go & rummage in the freezer in the hope of finding some hidden carton of ice cream.

Hello, Risky Readers, there’s been a slight change of plans and today you get me again. And I’m also rather late with posting – sorry about that! (I also apologize for any typos in this post; it’s really late here in Germany and I’m so ready to head to bed….)

So I thought today I could talk a little about food because tomorrow I will go to that lovely reconstructed Roman fort near where I live and attend a Roman cookery workshop. It’s called “A Look into Apicius’ Pots” and includes not just a guided tour through the fort and museum, but also a hands-on experience of Roman cuisine: we will prepare a meal using Roman recipes (from Apicius’ cook book, I assume) and then we’ll eat said meal from replicas of posh Roman tableware (that would be Samian ware made in what today is southern France).

There might even be garum, that dreadful, shudder-inducing Roman fish sauce that was made by putting fish heads and fish innards into a vessel together with herbs and what not and then putting it out into the sun for a couple of weeks. The Romans poured that stuff basically over everything. Like ketchup.

It’s going to be an interesting afternoon!

In addition to doing some practical research on Roman cuisine, I also recently stumbled across a rather fantastic BBC documentary called “Victorian Bakers.” In this documentary a group of modern-day bakers all don Victorian clothing and learn how their 19th-century predecessors made bread.

Bread was incredibly important for 19th-century England, as it was the staple food for large parts of the population. In the Regency period, bread making hadn’t yet become industrialized. Bakers ran their business as they had done for decades: from a bakery in a village, often near – or indeed, even part of – a local mill. They also worked closely with brewers from whom they got the yeast. Compared with more modern forms of yeast (think of dry yeast out of a package), this particular yeast was a bit more temperamental. The dough had to be kneaded much longer and the proofing took much longer as well. On the other hand, bakers had to be careful not to overproof the dough as it was possible the yeast would go bad.

Once the oven was fired up, the bread was baked and then the baker’s boy would go from house to house in the village and deliver bread that had been pre-ordered. As most people didn’t have an oven to bake in at home, bakers also offered a service whereby villagers could come and have their things baked in the baker’s oven.

While in earlier centuries only the upper classes had been able to afford white bread, by the early 19th century white bread had become the standard in all households. The older forms of barley bread and rye bread were disdained by large parts of the population, even though there were several attempts by health reformers to make whole-wheat bread popular again. Thus, in the Mirror of Literature, Amusement and Instruction we can read in 1847:

Nothing is more false to suppose than what is called fine white bread is better than the bread made of good wheat, ground into flour without abstricating from it the digestive principle contained in what is termed the husk, or skin. Nothing is more wholesome or so easy of digestion as this natural pure bread, when made with wheat of proper quality; and though the color is more homely, still the taste is far superior to that of white bread.

What I found perhaps most surprising about that BBC documentary was the realization that 19th-centiry bread would have tasted much, much different from our bread, mainly they used a different kind of wheat as well as that different yeast. That’s something we don’t really think about very often, do we?

The first Wednesday of October is the traditional date for the Nottingham Goose Fair, which today is a huge pleasure fair. But as its name suggests, in former times, one of the main goods being sold at that fair were indeed geese.

The time around Michaelmas (also known as the Feast of the Archangels or the Feast of St. Michael and All Angels) on 29 September was traditionally a time for goose-eating in England — according to legend, because Queen Elizabeth received news of the defeat of the Spanish Armada on Michaelmas Day, just when she had sat down for a meal of roast goose. She thus declared (again, according to legend) roast goose should forevermore be eaten on Michaelmas day in celebration of England’s might.

The truth is a bit more mundane: by the Tudor age, goose eating had already become connected to Michaelmas – probably because it is one of the old quarter days, marks the end of the harvest season and the beginning of the new farming year. Incidentally, spring geese are big enough to be slaughtered by the end of September and thus, a goose became a customary gift of tenants to give to their landlord when they were paying the rent on Michaelmas Day.

Not surprisingly then, at a lot of fairs held around the country around Michaelmas the wares that were being sold included geese. Most of these goose fairs have been long forgotten, but Nottingham Goose Fair is one of the few exceptions.

The fair has a very long tradition: in some form or another, it might have existed even before the Norman Conquest, and it had received its name, “Goose Fair,” by 1541. Originally, the main event of the far was indeed the selling of geese. An article from the September 1871 issue of Golden Hours: An Illustrated Monthly Magazine for Family and General Reading mentions that a “street on the Lincolnshire side of Nottingham is said to be called Goose-gate from the numbers which were driven through it for the annual goose fair, when from 15,000 to 20,000 of those birds were brought from the Lincolnshire fens, each flock attended by a goose-herd with a crook, wherewith to catch and lead out any goose which a possible customer might desire to examine more closely.”

By the 19th century, it was considered lucky to eat goose on Michaelmas Day: according to a proverb, you’d never lack any money if you ate goose on Michaelmas Day. And in 1813, in a letter to her sister, Jane Austen writes, “I dined upon Goose yesterday — which I hope will secure a good Sale of my 2d Edition” (i.e., the 2nd edition of Sense and Sensibility).

Today, only the name of the Nottingham Goose Fair and the sculpture of a giant goose in the town serve as reminders of the old purpose of the fair, which by now has become a giant pleasure fair.

In other news: A couple of days ago, I sent my latest WIP to my editor. “The Centurion’s Choice” is a spin-off novella from my Roman series and will be ready for release at some point in November. (And poor Lucius doesn’t have any nipples in this picture. *sigh* Sandra Schwab, forever forgetting to give her male digital models nipples.) (He totally will have nipples on the finished cover!!)

First of all: Oh my gosh, I’m so sorry I forgot to post yesterday! I was busy putting the finishing touches to Yuletide Truce, one of my Victorian holiday stories, which will be released later this year, so I’d be able to send it to my beta readers. I did send it to my beta readers last night (and of course, I’m now convinced they’ll hate me after reading the manuscript) (but hey, that’s a vast improvement over thinking my manuscript might prove fatal for my poor editor!!!)

Aigee, from Yuletide Truce, by Sandra SchwabAigee (short for Alan Garmond), one of the main characters in Yuletide Truce, has grown up in one of the poorest districts of London, before he was apprenticed to a bookseller at age eleven. He is torn between his new life and his old, and he often returns to his childhood haunts.

So, not surprisingly, for this story, I looked at some of the darker aspects of Victorian London, and one book in particular proved to be enormously helpful in finding out about the poorer population: Henry Mayhew’s London Labour and the London Poor.

Mayhew was one of the co-founders of Punch (yes, we always come back to Punch, don’t we *grins*), though he severed the ties with the magazine only four years later. In 1849, the editors of another periodical, The Morning Chronicle, invited him to write a series about the working people of London under the title of “Labour and the Poor.” These articles formed the basis for an extended three-volume study, namely London Labour and the London Poor.

Mayhew’s work is in many ways ground-breaking — not just because he threw light on a class of people who were so often forgotten, but also because interviews made up the bulk of his articles. Through him we get to hear the voices of the streetsellers, the old-clothes dealers, the mudlarks, the omnibus drivers, and chimney sweeps. He let them talk about their jobs, their everyday lives, their hopes and dreams. One of the streetsellers Mayhew introduces is the muffin man:

“The street sellers of muffins and crumpets rank among the old street-tradesmen. It is difficult to estimate their numbers, but they were computed for me at 500, during the winter months. They are for the most part boys, young men, or old men, and some of them infirm. […]

I did not hear of any street seller who made the muffins or crumpets he vended. […] The muffins are bought of the bakers, and at prices to leave a profit of 4d. in 1s. […] The muffin-man carries his delicacies in a basket, wherein they are well sweathed in flanne, to retain the heat: ‘People like them war, sir,’ an old man told me, ‘to satisfy theym they’re fresh, and they almost always are fresh; but it can’t matter so much about their being warm, as they have to be toasted again: I only wish good butter as a sight cheaper, and that would make the muffins go. Butter’s half the battle.’

A sharp London lad of fourteen, whose father had been a journeyman baker, and whose mother (a widow) kept a small chandler’s shop, gave me the following account:

‘I turns out with muffins and crumpets, sir, in October, and continues until it gets well into the spring, according to the weather. I carries a fustrate article; werry much so. If you was to taste ’em, sir, you’d say the same. […] If there’s any unsold, a coffee-shop gets them cheap, and puts ’em off cheap again next morning. My best customers is genteel houses, ’cause I sells a genteel thing. I likes wet days best, ’cause there’s werry respectable ladies what don’t keep a servant, and they buys to save themselves going out. We’re a great conwenience to the ladies, sir — a great conwenience to them as likes a slap-up tea. […]'”

(Can somebody pass me a warm muffin, now, please?) (And we’re talking English muffins, of course, a type of small, flat, round bread, rather than the cake-like American muffins.)

Passive solar heating is a “hot topic” these days (no pun intended). Did you know it was being used on Regency estates and even 150 years before the period? (Rabbit hole warning!!)

I asked my fellow members in the Regency Fiction Writers about the availability of citrus fruit in remote Derbyshire in April 1814. I asked because many of the Regency recipes I have seen require oranges or lemons as part of the ingredients, and the characters in my current wip, Her Perfect Gentleman, needed some for a project. These fruits grow best in places like Spain, Italy, the Caribbean or Florida, and I wondered how much the Napoleonic Wars disrupted these imports.

An interesting discussion followed and uncovered some wonderful sources. The answer was: not as much as you might think, because the trade was so important and the Royal Navy made sure to protect the shipping trade routes. But I still wondered how far north the distribution of imported fruit would reach, and how far from the main cities and towns. I was reminded that some of the very wealthy might have orangeries on their estates, and their surplus would be sold. But how common were orangeries, and how far north could they still be effective?

The earliest orangeries began as shelters created to protect fruit trees being grown against south facing “fruit walls” in gardens. The use of fruit walls in northern Europe to create a micro-climate for growing fruit dates to the mid-16th century, not coincidentally about the same time as the start of the so-called “Little Ice Age” (c. 1550-1850). A Swiss botanist named Conrad Gessner observed in 1561 how well the sun-heated warmth of a thick south-facing wall improved the ripening of figs and currants. Such a wall, built of brick or stone, both absorbs heat and reflects sunlight during the day and releases heat during the night, which in cold seasons could protect against frost.

Intrepid fruit growers experimented to improve the effectiveness of fruit walls, adding canopies of thatch (or glass, later on) or woven mats or canvas curtains that could be drawn over the fruit trees to protect them from rain, hail or bird droppings, for instance. When techniques to create panes of clear glass came out of Italy, growers began to make cold-frames to start seedlings early and also to tilt frames with panes of glass against the fruit walls to increase the solar heating effect, protect the trees from winds or other weather and extend the growing season.

The Dutch were particularly adept at innovations in improving the solar growing techniques and were the first to build actual framed glass enclosures along the fruit walls, creating the first “orangeries.” They also began to add other heat sources to supplement the sun, including small stoves inside the enclosures, for example. They also were the first to try building channels within the fruit walls themselves for artificial heat to supplement the sun, developing what became known as a “hot wall” (not to be confused with certain portions of the fortifications at Portsmouth harbour which also bear this label!).

From this common point, the further development of orangeries and hot walls diverges. The French, who discovered improved yields by training their fruit trees or vines along their fruit walls in the method known as “espalier,” also had entire towns adopt fruit walls as an industry. But their walls produced mostly peaches or grapes, not citrus.

Orangeries, meanwhile, began to be built as separate facilities, designed by landscapers and architects not only to shelter citrus fruit trees but also as places for entertainment, a way to show off a luxury only the very wealthy could afford. Walkways, statuary, fountains, even grottos were added features among the citrus trees, although the buildings needed to be long and narrow to allow light from the windows to reach all the way into the space. The buildings were often designed to echo the architectural style of the main house. As interest in exotic plants grew, the function of orangeries’ micro-climate expanded to offer shelter and display for such other choice and tender specimens.

Some early examples still exist: the orangery at Kensington Palace designed by Nicholas Hawksmoor was built for Queen Anne in 1704 and featured a heated floor. The orangery built at Versailles in the 1680’s was the largest in Europe, designed to hold Louis XIV’s 3,000 orange trees.

Dyrham Park in Gloucestershire has one designed to hide the view of the servants’ quarters from the main house. Built in 1701, it had, like all orangeries at this early period, a solid roof. Humphrey Repton is credited with replacing the slate roof with a glazed one in 1801, about when the technology to do so first began to be feasible.

The Kew Gardens orangery was designed by Sir William Chambers in 1761. At the time, it was the largest in England, but it wasn’t very successful because of low light levels. Its orange trees were removed to the Kensington Palace orangery in 1841 and renovations were made to the building at Kew. Orangeries can be found at more than a dozen estates managed by the National Trust, and many are now used as cafes or restaurants, their many windows and bright light still providing very pleasant surroundings.

Many private estates that chose not to build an orangery boasted a fruit wall as part of their gardens, however. In England, the added expense of building these in the form of “hot walls’ was often worthwhile because of the colder climate, especially in northern counties. The earliest hot walls were heated by fires actually lit inside the flues, in addition to the sun. Later, the supplemental heat came from small furnaces located at intervals along the back (north) sides of the walls. They were common enough to be described in detail in Phillip Miller’s Gardener’s Dictionary in 1754.

The science of creating a successful hot wall is quite impressive, requiring different thicknesses of bricks or stone for various parts of the structure, support for the channels that run through the structure, plastering of the interior heat channels to facilitate cleaning them, and stove chimneys built at regular intervals as part of regulating the heat. Some wall chimneys were fitted with ornamental chimney pots made of Coadestone. Specially skilled masons as well as the expensive custom-made materials were required to construct them. However, none of this provided enough warm shelter to grow citrus successfully in mid-to-northern England without fully enclosing the space. From extant accounts, it appears that the fruits most commonly grown on fruit walls were peaches, nectarines, and Morrell cherries.

How many estates had hot walls is not known. Fruit walls were a labor intensive, high maintenance undertaking, and hot walls added a second layer of labor to maintain and clean the heating system itself as well as to monitor and regulate the heat. The need for hot walls declined as railroads came along, for improved transportation made importing fruit cheaper. Many of the walls were left derelict and were later torn down.

The article on JSTOR cited at the end of this post lists specific estates where hot walls have been recorded: Yorkshire (17), Cheshire (5), Lancashire, (1), and Essex (1). Probably half a dozen more are mentioned in the text also, including Staffordshire (1), Norfolk (1). Wikipedia mentions the one at Croome Court, Worcestershire, as well as two in Scotland in its article on walled gardens. Recent interest has sparked some research and increased awareness that may contribute to more “remains” of old hot walls being recognized and recorded as time goes on.

Improved technologies in the 19th century led to changes in the orangeries rather than their demise—no doubt why more remain to be seen today. But as orangeries became “greenhouses” with more and more glass, they became less and less energy efficient. They lost the balance between heat absorbing, insulating materials like brick and stone to offset the sunlight-providing glass and relied more and more on artificial heating, especially piped hot water. Today, the newest trend in greenhouse agriculture is heading back towards using solar power for both heating and regulating light.
